Baking can be seen as an art, a craft or a science. Whichever your view, the method is as important as the recipe. The equipment that you use should ensure consistency by enabling control of the variables at each stage of the method and accurate measurement of the basic recipe. Although it is time consuming to formally record variations in your method, it will actually save time, wasted ingredients and lost customers. Starting with recipe formulation, ingredient weights must obviously be controlled, but so should temperature, which is often ignored. Time and temperature should then be monitored at the mixing, retarding and proving, and baking stages.
Selection of the basic equipment of the correct type, with a capacity to match production plans and reasonable growth that allows control is fundamental.
